PEPPERS STUFFED WITH FETA

4-5 green and red peppers
400 gr. feta
1/4 cup olive-oil
origano,pepper


   Fill the peppers with crushed feta.Place them on a sheet pan.Add origano,pepper and olive-oil.Roast the peppers at 180C for about 30 minutes.




EGGPLANTS WITH TOMATO AND FETA

3-4 eggplants
1/2 olive-oil
1 big onion(sliced into thin wedges)
1 sweet pepper(sliced into wedges)
1 cup chopped tomato
2-3 cloves garlic
1 cup water
1/2 tbs sugar
salt,pepper
origano,parsley(chopped)
100gr. feta


 Cut the eggplants in two pieces and then in quarters.In a pot over high heat,add the olive oil.Add the eggplants and cook until they start to turn light brown.Pull over the eggplants in a plate.
In the same pot add onion,sweet pepper and garlic.Cook for 2 minutes.
Add the eggplants, tomato,water,sugar,salt,pepper,origano and parsley.Cook for 10 minutes.
  Serve with feta.
